Grace urged me to think of the simplest dishes for people with busy lifestyles, like her. Nothing can be easier than Chicken in Corn Sauce, a popular Cantonese dish with ingredients kept to the minimum.
Ingredients
4 pieces of chicken thigh/2 breasts (I cook more and save some for another dish)
1 can of cream style corn
Seasonings
1/2 tsp salt
1 tsp sugar
1 tsp of pepper
1 tbsp of soya sauce
1 tbsp of corn starch (must have or the chicken becomes dry)
1 tbsp of cooking wine/water
Method
Cut chicken into thick strips or cubes and marinate in seasonings for 20 mins
Heat oil in medium high heat and cook chicken until golden on both sides (I cook more and save some for another dish the next day)
Add the whole can of cream style corn into the chicken and bring it to boil. Season with salt and pepper.
Serve with steaming white rice.
