Easy Fried Rice


After multiple Chinese New Year feasts, my fridge is loaded with leftover food. Unfortunately, my family doesn't like reheated leftover dishes. So, I usually use leftover food to create something that looks and tastes totally different. Fried rice is probably the best way to use up leftover meat and rice. This homemade version is not fried and uses very little oil.


Ingredients

  • Leftover meat, diced (in this video, I use BBQ pork)

  • Leftover rice

  • Onion, diced

  • Frozen green peas (optional)

  • Green onion, diced

Method

  1. Heat oil in pan and gently pan fry onion until soft

  2. Add meat and rice. If rice is stuck together, break it up (best with fingers) and mix well with onion and meat

  3. Add eggs and green peas and mix well

  4. Add soya sauce, pepper and salt

  5. Add green onion.
