The Cabbage Soup Diet was all the rage in the 90s and I fell for it too. For three days, I ate cabbage soup and nothing else. I lost 3 pounds but I was miserable and hungry. Finally common sense kicked in and I went back to my normal diet.
I like the taste of cabbage soup but I don't want to be deprived of other delicious food. Over the years, cabbage soup is served as a tasty and healthy appetizer in my household. When I add meatballs to the soup and serve it with a piece of toast, it becomes a healthy lunch.
Ingredient
1 cup of diced onion
3 cloves of diced garlic
1 cup of diced carrot
1cup of diced celery
1 can of diced tomatoes or 2 cups of fresh tomatoes
4 cups of diced cabbage
1/2 tbsp of dried mixed herbs
2 bay leaves-
5 cups of stock
Method
Put some oil in a pot and keep stove at medium heat.
Add onion, garlic, carrot, celery, mixed herbs and let the heat release some flavours.
Add tomatoes, bay leaves, stock, salt and pepper.
Cover pot and boil for 30 minutes until the cabbage is soft
Add meatballs or chicken pieces if you want to include some protein.
