One Pot Pasta with Chicken


I consider cleaning part of my cooking routine. An easy recipe should be easy to clean as well. This one pot pasta dish minimizes cleaning and it tastes amazing. It goes well with chicken, shrimp, meat balls or minced meat. You can also add spinach and zucchini to the pot. Just add them half way through the cooking as vegetables are easier to cook. I happened to have some marinated chicken in the fridge so I whipped up this dish in 20 mins.


Ingredients

  • 200 g of spaghetti

  • 1big onion, diced

  • 1big handful of cherry tomatoes, halved

  • 4 cloves of garlic, diced

  • basil leaves

  • 1 cup of tomato sauce

  • 2 cups of water for al dente spaghetti, 2.5 cups for softer spaghetti

  • Parmesan cheese

  • Marinated chicken (salt pepper, soya sauce, cornstarch)

Method

  1. Heat oil in pan and brown chicken pieces on both sides. Doesn't have to be fully cooked. Remove chicken pieces for later use

  2. Add onion and garlic and pan fry to release flavours. No need to brown them

  3. Add spaghetti by breaking in halves

  4. Add tomatoes and basil

  5. Add tomato sauce and water and bring to a boil

  6. Salt generously. Add some pepper

  7. Occasionally move around the pasta to prevent it from sticking together or at the bottom of the pan

  8. Cover and cook for 12 mins minimum, longer if you are using 2.5 cups water.

  9. Add 1 tsp sugar to bring out saltiness (optional)

  10. When the spaghetti is ready, return the chicken into the pan and cook for 2 mins.

  11. Plate the dish by adding additional fresh basil and parmesan cheese
